How do you make red velvet cake bright red?
Everytime I have tried to make red velvet cake it always turns out a pink-brown, never red. What might I be doing wrong?
Could it be the cocoa powder? I use dutch-processed.
Oh, and I used concentrated gel color, not liquid.
It could be the quantity of cocoa - unsweetened or dutch processed - that you're using. Some recipes use as little as 1 teaspoon while I've seen others that use as much as 1/3 cup.
I use 1 ounce liquid red food coloring and 2 tsp. unsweetened cocoa powder for mine.
